I’m thrilled to share my first New South Mama Cooking Video with you for a simple, fresh and delish way to prepare fresh veggies! This particular video is for Red Cabbage, but the same style of cooking can apply to kale, greens, broccoli, cauliflower… you name it! Leaving all the nutrients in tact, this is a fantastic way to enjoy vegetables in a whole new way. Especially if you don’t really like veggies, try this. It may surprise you! Red Cabbage Sauté
1 small head of Red Cabbage sliced
Extra Virgin Olive Oil (EVOO)
pinch of Kosher Salt
Fresh Ground Pepper
3 tbsp Organic Chicken Stock (Make your own!)
Toss the sliced cabbage in a large bowl with EVOO, salt and pepper. Heat saute pan on medium high heat and drizzle a layer of EVOO into the pan. Carefully place the cabbage into the pan and stir. Cook for a few minutes. Once “sizzling” add a small amount of chicken stock and cover quickly with a smaller lid to hold in the steam. Cook covered until tender, not crunchy but not overcooked. Serve hot! (Can add hot pepper flakes or garlic powder to taste)
